Ideas for Diced Pork Stew Meat & Smoked Ham Hocks

Bought some cut up pork and smoked ham hocks to make white beans this past weekend at the camp.... upon my arrival, someone had already started a big pot. I brought home home the meats.... problem is, my wife doesnt like beans - wont eat Red Beans, nor White Beans, notta Purple Hull Peas. “Texture” thing she says.

A big pot of peas or beans would be wasted as my son and I couldnt consume them all.

Thoughts on what i could cook w them? Ive considered a soup. Considerd making a stock, but ive got 4 gallons of smoked turkey stock from Christmas & Thanksgiving Turkeys. I have tons of ground venison, sausage, duck, goose & andouille in the freezer. Im on an exercise/workout routine so Jambalaya is out of the question due to rice/pasta.

Could make something to freeze if that would be best. I do have several vac packed bags of gumbo in the freezer already tho.

Guess I could braise some greens and freeze the rest until I wanted to make Red or White Beans again.

Wonder if a pork curry would be good w smoked hock stock?

Need some ideers from the greatness of FDB. Thanks folks

We need it. We are a pair that grew up very differently, from different parts of the country, eating very different things. Its been a 2 decade struggle, but we are hangin n there.

Oh. What about making a skewer with veggies and put them on the grill ?

I made posole a few times from the recipe below given to me by my bug man. The amounts were approximant from him as he makes it a lot and just makes it from memory. It was very good and it froze well. I didn't add the hominy because I don't care for hominy. I think everything else should work on your diet. You could look at some other recipes and combine or use one you find.

If you want to use the hocks to give it a smoky flavor, that would probably work. Maybe make stock with the hocks to use rather than the chicken stock.

Pork meat –shoulder, chops, tenderloin whatever, cubed- about 3 lbs
1-2 large Spanish onions
6 cloves fresh minced garlic
Ancho chilis or guajillo peppers(dried) about 10
A few jalapenos-optional
Chicken stock-about 4-6 quarts
Canned green chilies-2-3 4 oz cans
2-3 cans drained hominy (I didn’t use)
Chili powder-probably about 4 T
Cumin- 1-2 t
Oregano-Mexican if possible-1-2 t
Salt to taste

Brown the meat. Deglaze, brown and repeat. Add onions and garlic until clear. Add chicken stock. Cut and seed peppers. Reconstitute in simmering water just enough to cover them, until soft. Puree in the water so it makes sort of a sauce.
Add mixture to pot. Add chilies and seasonings. Simmer a bit. Add hominy about 15 minutes before serving.

Toppings are: lime juice, cilantro, chopped radishes, avocado, shredded cabbage and diced onion. Can add sour cream and some shredded cheese.

Pork stew, how much meat you talking here?

You could also just freeze it to use later.

Cut him some slack...he’s backwoods, big time.

Boss, I,d use ham hocks in greens and they freeze well.

The pork in a messican soup sounds excellent.

Vac packed the hocks and the diced pork. Tried to find some reason to cook it today but just didnt get fully committed. They will be better in some greens and white beans later. Maybe red beans when i cook for friends.

Re: rice/pasta vs beans. I can eat whatever - just choosin not to eat rice and pasta at the moment. A dam fine pot of beans will pull me off any diet if i can make some homeade cornbread with it. Thats likely what all this is gonna make after i shed a few lbs....

And yes, Otis is right. Maybe for the 1st time. Ever.

Im country as said cornbread.
