I do it when potato salad is available but I don't substitute the rice for it. I have it on the side. Get a spoon full of it and sort of dip in in the gumbo every once in a while.

I've always used a basic potato salad, same one I would use for any side dish. Potatoes(careful not to cream them, a little chunkiness helps), mayo, good bit of yellow mustard, eggs, & black pepper & salt. Someone mentioned they didn't like it because it made the gumbo cool down to quickly. I never use cold potato salad, fix it just before you are ready to eat & it will be warm/room temp.
Sweet potatoes are also a norm around where I grew up, not a big fan just because I'm not a big sweet potato fan but some people love it.

Today I don't know about but next week throughout Lent one of the churches elderly ladies have a long tradition of making gumbo to serve the masses down town. I think it is the Episcopal church on Florida.

I like potato salad in gumbo, but I do not prefer it. It's a nice change of pace and I eat it like that about once a year, usually with my aunt's gumbo at the family Christmas party.

I love both. Rice or potato salad, pass the gumbo over here. But the sweet potato goes on the side. It goes great, but it stays on the side.

Tater salad gives your mouth so many flavors and textures that rice can't provide, you must ignore Counts no crunchy meme about it.


ETA the salad must be served hot not cold by any stretch of the imagination.

I have never substituted potato salad for rice, but I do enjoy a nice bowl on the side. On occasions, I have dipped a spoonful of potato salad in the gumbo and ate it that way.

I've poured gumbo over mashed potatoes, and that was good too. I was out of rice.

I do not eat rice at all in gumbo, if I have potato salad or baked sweet potato, I put that in the gumbo.....Definitely try the sweet potato

Crispy bacon on top sounds pretty good to me. A few roasted jalapenos might be an interesting sub for hot sauce or cayenne. No cream cheese, though.

I've put jalepenos in gumbo, with the trinity. I've even made a gumbo with habaneros. (Well, one.)

I too tried it for the fist time in my life a year back. I didn't want to like it but I did.
