I need your sausage recipes

I have 10 lbs of garlic and green onion venison sausage and 20 lbs of pork sausage.
Need some recipe ideas to start putting it to use.

Deer sausage Jambalaya is a great way to burn up a good bit of it. Smoke a few lbs of it, chill and slice like traditional smoked sausage. Then take a few lbs out of the casing and brown it in the bottom of your pot to start your fond. Make sure the pot is hot hot so you’re browning it and not steaming it. Do everything else like you’re doing a Gonzales style brown jam

We used to make a fettuccini with it too... bake a couple of lbs of links until just cooked through. Rest and then slice.
In a large sauce pot, cook down some trinity in butter. Throw in a can of cream of mushroom soup and a can of golden mushroom soup. Add milk to get it to the right consistency. Add in your sausage and season with Tony’s, granulated garlic, parsley flakes and chopped green onions. Simmer it while you cook 2 lbs of fettuccine. Mix well and serve with garlic bread
