I absolutely love going to Bailey's in Laplace! The second I walk in there is a happy moment to me.
I went there today to pick up some more smoked meats and that aroma just makes everything better. I wish is came in a can as an air freshener!

Grabbed a few sticks of andouille, some tasso and smoked and "Hot" smoked sausage. Not that I have a shortage of sausage in the freezer at home.
I'll be roasting a turkey on the grill this weekend and I anticipate leftovers for a Turkey Andouille Gumbo. and Yes, I will be making a stock from the carcass.

That's my go-to place for andouille. I know folks who are loyal to Jacobs right down the hwy. from Baileys, but I've never tried it so I can't comment on their quality.

The only thing I don't like about Baileys andouille is the use of synthetic casings on their sausage. That stuff needs to be cut off before using just like some deli salami.

I think it's pretty evident that there's no shortage of sausage in your life.

My new go-to is La Bon Boucon in Vacherie. That maudlin (giant andouille) he makes is awesome.

I love Bailey's, too. To me, theirs is the best andouille and their tasso is very smoky and peppery.

Need to try Wayne Jacob's Andouille on West 5th in Laplace. Born and raised in Laplace and Wayne Jacob's is better than Bailey's in my opinion. Both are very good, just prefer the smokiness in Wayne Jacob's better.

I've tried Jacob's, Wayne Jacobs, Don's Country Store and Bailey's in a blind tasting. Bailey' won for andouille, tasso and hogshead cheese.

I've had folks tell me gumbo is a cold weather dish and not prepared in the summer. bullshite.

It's no hotter than a good plate of red beans and rice, bowl of beef stew, meatballs and spaghetti, etc.

Besides I'm picking okra like crazy now, just went to Baileys last week for Andouille and have at least 4 chickens in the freezer. Sounds very much like gumbo to me

I live in Baton Rouge and work in LaPlace for years now. I've tried a lot and concluded you won't find bad product down there. Even the corner stores on LA44 have good andouille.

I've tried WJ, Jacobs, Bailey's and even Don's in Reserve there and I still prefer Bailey's for like SR said... andouille, tasso, hogs head cheese. WJ is really good too but if I can only have one it is Bailey's.

I remember when Bailey's was still using the real casings and prefer that but even with the manmade stuff their andouille is still better to me.

You know, Wayne Jacobs Smokehouse changed hands in the last 2 years or so. They were also once owned by the people that owned Parran's Poboys in Metairie. There was a time before Katrina when they sold andouille and such in the back area of the restaurant.

To me, that doesn't speak well of WJ's. I hate Parran's!!!!!!!!!!

Parrans changed owners, got expensive and their food isn't what it used to be. That new owner that boasts about a "gravy bath" on the radio ads sounds like an arse.

WJS has changed hands about 5 times over the years, I think.
