I put on two Boston butts last night at midnight, with a full hopper. I finally went to bed about 4am and woke at 11am. I check on the butts and realize I’m out of pellets. It’s in lower temp alarm. I do not know how long it’s been like this. The internal temp of the butts are 105. I don’t know how high it got this morning. The internal temp was 80 deg when I went to bed.
Are the butts ruined? I have it back lit and cooking.
What sucks is I don’t have it connected to my phone yet, so I cannot track it.

= Yes

On the positive side, congrats on being one of the few to frick up the "easy bake oven" version of meat smoking.

Why?

I'd fill the hopper back up and cook them through. That hopper isn't going to burn through in an hour or two. They couldn't have been in a bad state for too long.

Thing must have a small hopper if you burnt through the whole thing in less than 12 hours

Why?

Because food at less than 135F for as short as one hour can lead to harmful bacterial growth. Just not worth the risk to me.

My reaction would have been frick now it’s going to take longer. I never would’ve even considered the meat was bad. Just fired it back up and crack a beer.

I probably would have touched the outside and made the call moreso than worrying about internal temp. If the outside was ambient I would have called it a loss.

That’s what I did. The grill was still at 90 deg, so it couldn’t have been long.

The chemicals in those chinese pellets will probably do more harm than bad pork.

How the hell did you go through a full hopper of pellet that fast. When I do an overnight brisket I usually put it on around 9PM and check it around 7 - 9AM the next morning and I still have at least 1/2 hopper. I run my temp at 200F for brisket.

Maybe because it was 4:00 AM but you didn’t start with a full hopper.

My 1st thought.

I run mine at 225° and have never had my hopper go empty on a brisket.

That’s an impressive feat on a Traeger.

Good news is you won’t do it again.

You cooked them for 4 hours and didn’t get the temp past 105?

How big were these butts?

I doubt it's ruined especially if the temp was 90 on the grill. I would be sure to get it up to around 205 and hold it there for 30 min or so before pulling. In theory you'll kill any bacteria that happened to form once you get over 140. Now if it had set at room temp over a few hrs then I'd have a different opinion.
