Howdy FDB, I come for advice.

Howdy all,

Wife and toddler are out of town for the weekend. I am cooking.

Tonight is Navy beans and cornbread (I had to work today).

Tomorrow is steak and potatoes, possibly a gumbo to freeze.

Sunday, I found a recipe for Texas Chilie Chili Con Carne. I honestly don't know if I have ever had this before, but it looks delicious. The recipe is a Facebook recipe, but I have found a few decent ones from there, so I might just try it. Being as that I have never cooked (and probably eaten this before) I want to post the recipe and see what yall think. What would yall change? Is this even worth cooking?

I plan on getting the meat from Sams (Chuck roast, choice) and rest everything from Rouses.

Also, I went with 1792 for my bourbon tonight. Overpriced and regretful purchase.

Just keep drinking that bourbon and the chili shite will taste amazing around midnight.

Not a terrible idea. I loathe Buffalo Trace for their shortages.

I do love a good Mississippi pot roast. Might just stick with what's good and proven.

$36 after tax. Beverage store on Florida. Great deals on some, bend over for other stuff.

Just eat that whole Chuck Roast and around midnight that 1792 will be tasting good.

I'm glad the recipe uses dried chili's rather than a store bought mix. I usually toast and grind the chili's into a powder for my mix but making a broth out of them is valid. The pressure cooker has me concerned but I use one for my red beans so it's possible to make it work. Using fish sauce is a bold move but I use soy in my chili so I'm OK with it.

That chili looks mouth-watering. I've always used ground beef, ground pork and small-cubed beef (chuck, sirloin, ribeye, boneless short rib...whatever is handy). Never used the whole dried chilis but I need to. No way it doesn't improve the depth of flavor. Fish sauce has me a little worried though.

That recipe looks really good, but it’s not for starters IMO. Their pics are def not what yours will look like at the end. Also, why wait to cook til the wife and kid are out of town? Why not cook for the wife and get some brownie points?

Fish sauce is a secret flavor-weapon in meat dishes that -- when "X" dashes / tsp / mg are added -- you cannot figure out what is giving you that extra background umami taste.

However, at "X + 0.1 micrograms", it takes over. Be careful.

Just my opinion. I'm a fan.

Wife is coming home tomorrow night. Hope to have it ready by then.

Think I am going to give it a shot. Dominos still has their 7.99 carryout deal if it goes south.
