I'm tired of the way mine tastes but I'd like to stick with brown for the little healthier option.

As of now I'm adding bell pepper toward the end. I've tried onion but it seems overpowering and I'm an onion fan.

Cook it in some kind of stock like chicken, beef, even a shrimp stock if using it in a seafood dish.

The health benefits are minimal from white to brown. Don't waste your time trying to polish a turd

Stock is a great idea. If you have any turkey stock from Thanksgiving, that would taste great.

Have you tried toasting it first? I rinse then toast a bit in the pot before I pour the water over it. I don't use any added fats but toasting in a little butter or oil would add some flavor.
