Don't shoot the messenger, just try it once. You won't regret it. Brown some halved and quartered pigs feet and then add them to your pot of red gravy. Cook it for several hours to release that good fat and gelatin into your gravy.

I like to add a few beef marrow bones and let that cook down. Nice richness.

I simmer pork ribs which I suspect have a similar result.
