how much jambalaya can i cook in a 12 quart pot.

my recipe is planning on about:
8 lbs chicken, 4 lbs pork, 4 lbs sausage, 4or5 large onions, 2 bell pepper, 8 stalks celery, 8-10 cups rice
will i be able to fit this in 12qt pot?
will this be enough for 30 people?

About 3 gallons?

I use about 1/2 cup raw rice and 1/2 cup meat per person

usually get 8-10 servings per gallon so you would be cutting it close with 30 people and a 3 gallon pot, and according to your recipe I would add more rice

I think you can do all of that pretty easy. What amount of liquid do you plan to add? I go 2/1 on liquid to rice in my No. 12 and it'll hold 8 cups of rice easily. And, with a salad and bread, what you've described should feed a mixed crowd of 30 very easily.

you're gonna have a hell of a time fitting that in a 12qt pot... The most I usually do in a 12qt is a little more than half of that maybe.

Agreed that it'll be heavy. When nearly full(@ a 10 cup of rice cooking), it's a hernia waiting to happen.

It's too close. I use 20 cups of rice in a 10 gallon pot and it's full when it's done. 4 quarts in a gallon. Do the math and change the proportions or get a 5 gallon pot and less gray hairs.

It'll be full as soon as you add your rice. As soon as it starts to swell your gonna have a mess on your hands.

No. I add about those proportions to a No. 12 pot all the time. I usually have @ 9 lbs of deboned chicken,3 to 5 lbs of sausage and tasso, 3 or so onions, 3 or 4 ribs of celery, 1 or 2 bellpeppers, plus 8 to 10 cups of rice and 2x liquid (plus seasonings)and it fits fine. I did two No 12's Sunday with these approximate proportions and both turned out great.

3 gallons. I figure 8 - 10 per gallon with sides when I cook.

Looks good here but way too much celery. Lose 3/4 of that. Bell pepper can take over a jam too. Use one big pepper.

Yes but its gonna be tight. Prepare for some overflow when boiling. Grease in the water will flare up.

Yes if you have some beans and salad and bread to go with it.

That doesnt look like enough for 30 people, even with sides. Unless theyre very light eaters.

Full, that pot weighs 50+ pounds. I don't know what a light eater is...never had one at my place...

Well, the pot alone probably weighs 15 lbs, so you're talking 35 lbs of jamba for 30 people. I know I would want a lot more than a lb and I'm a very average sized person.

Every big crowd has several women in it that eat like birds. Children too. That leaves plenty for the men to eat.

Trust me. I have cooked countless jambs for crowds. When a mixture of men, women and kids 10 people per gallon with the sides is enough. Now if you're cooking for deer camp drunk men with no sides its more like 6 per gallon.
