How long will it take for a gumbo to cool after simmering?

I haven’t made it in a couple years so I can’t remember. I like to have it sit in the fridge for a day prior to serving but I don’t want to put it in there too warm. So how long will it take? A 12 person serving

If you want to speed it along, put the pot in a sink of cold water.

I usually let mine sit overnight and put in the fridge the next day.

Fill sink with ice water, submerge pot, wait.

And obviously don’t let the water be higher than the pot.

Not so much concerned about speed just want to give myself adequate time to cool. Is 3 hours enough?

Right, but faster will mean less chance of getting food poisoning.

Depends on several things. If you put it into small containers that you will be refrigerating or freezing, it will cool more quickly. If you're leaving it in a large container, it will take some time. You could add bottles of water that you have frozen into the container to cool it more quickly.

There's a reason Tupperware refrigerator containers are usually no more than 4 inches thick. That's to help them cool more quickly and keep the contents in the danger zone too long

Do what Gris says. I make a big sink full of icewater and salt that I drop the pot into and I also have a cooling paddle that I drop in the pot so there's ice inside and out so the middle doesn't stay hot while the outside cools. You can use the paddle to stir occasionally, too to eliminate hotspots. I can get a big pot of gumbo from cooking temp to cool enough to portion out and put in the fridge or the freezer in a couple of hours this way.

Ok so if I have a beer fridge and empty it can I just go straight from simmering to in the fridge without hurting anything? I will put it a towel down then a tray then another towel then pot to avoid cracking glass.

I would stir it several times during the cooldown to help redistribute the heat.

How is this safer than putting in fridge?

I never understood the risks of putting gumbo into fridge too soon? I’ve always just let it sit a few hours and put it away...

I wouldn't do that. It will bring the fridge temp up and take a while to cool down again because the fridge is sealed when closed. Just cool it to lukewarm and put it in the fridge.

Ive dealt with this a good bit. Even made a thread on it I think. My hypothesis is if you have a fridge that doesn’t have a lot of parishables in it just put it in whenever. The risk isn’t the gumbo, it’s the other stuff that doesn’t need to be warmed. If you don’t have that fridge, cool it in the sink as mentioned or break it down in smaller containers and let the sit unlidded until you have to put it in the fridge.

I always put mine in aluminum pans and directly into my fridge in my garage. If you break the gumbo down it will cool faster and get cold in fridge faster.

Your hypothesis is absolutely correct. The only reason to cool the gumbo prior to fridge would be if you are putting it in a fridge with other items that you don't want getting above 40 degrees.

Yes. Totally fine. I have a garage fridge with beer and waters and use it to cool food faster. Faster it cools, less chance of bacterial growth.

Who cares about the fridge working hard to get the temp down. It's a fridge. It's designed to do that.

Don’t give up and try to put it up too quickly,, just keep having another bowl until you whittle that big pot down a bit...
