Most of the time I do mine in the oven now at 400 degrees F.

Once the oven heats up, it takes about as long as setting everything else up to go.

I'm a cautious roux guy. A good hour and a half, sometimes closer to 2 hours.

Equal parts in the oven at 250 until desired color. Stir every 20 mins. Easiest stuff ever.

depends...during the week...0 time because im using a jar...weekend if i have time and want to relax and watch sports while making it...45-1 hour

I'm all for people doing whatever makes them happy. But i have to ask, why? If you enjoy it and it's just preference, ok. But, you do know it's a relatively simple task to have your roux finished in 15 minutes or so?

The only way i can conceive of it taking 2 hours to make a roux is if a) your doing an over roux or B) you are on low heat on the stove. If on the stove, do you not want to worry about stirring?

About an hour. Roux is to gumbo what a foundation is to a 40 floor condo on the sandy beach. If you don’t treat it with tender loving care while making it, the rest will be subpar.

I make an oil-less roux recipe I got on John Folse"s site. So to make a gumbo a couple of minutes. To create the oil-less roux a couple of hours.

Well I do like cooking and enjoy the experience, rather than looking at it as a chore.

I would just rather go slow than burn it and have to start over, is all. Lower heat gives me a little more margin for error.

Gumbo roux... 2 hours... in the oven

For lighter roux 10-20 minutes on the stove.

It doesn't have to take that long to be good IMO
