I like my omelets with leftover stuff I find in the fridge. Here's one that is ugly but tasted delicious. It has chorizo and onions and peppers and I don't remember what kind of cheese (I tried to hide the ugliness with arugula):
Here's a prettier one (but less delicious) with ham and feta:
See how there is white showing in that one? I guess I didn't whisk it enough.

Sliced mushrooms and/or onions. Cheese, if I have any on hand.

I make mine with Jimmy Dean breakfast sausage, a tub of pre-chopped onion and bell pepper, Kraft shredded mild cheddar cheese and topped with Pace Picante Sauce.

I usually like salsa, but I was out of it a few weeks back and found a jar of sofrito sauce in the pantry. One of those things I buy and then never know what to do with. Well, now I know ... great on omelets!

A little olive oil

For every 2 eggs add a tablspoon if water and whisk before adding your eggs to the skilllet.
Omelets should be light and fluffy.

Cheese+Jalepenos are the 2 ingredients that are in every omelet I make.
Other ingredients I commonly add: bacon,salami,pepperino,ham,bbq pork.
