How do you like your Fish Tacos?

I'm taking some scouts camping this weekend, and I want to make fish tacos for dinner tomorrow night. I need some tips :

- cooking the fish in a cast iron skillet,
- type of fish,
- what spices to use on the fish,
- what condiments/stuff to put in with the fish in the tortilla skins.

Any ideas? Easier is better. I'm going to get the scouts to do most of the cooking/preparations.

I don't fry mine. I just toss it in the hot skillet and sort of "blacken" it. Then I flake it with a fork.

I have used everything from Chilean Sea Bass to flounder to rainbow trout. My wife likes tilapia (I don't. )

I just use salt and pepper.

I like them spicy. Fresh chopped jalapenos. Pico-de-gallo. shredded cabbage (tell the scouts its lettuce... or use lettuce) Sour Cream? Schredded mexican cheese?

Beer battered and fried with guacamole, pico de gallo and shredded cabbage on flour tortillas.

best is homemade pico or salsa, make a cabbage slaw with olive oil and citrus juice seasoned with salt and pepper

Probably going to do the "lightly blackened" method. Use butter? Canola oil? Olive oil?

Lots of restaurants squeeze out some cream based spicy sauce on the taco. Anybody know what that stuff is? Can I buy some, or can I make it?

I'll put out some jalapenos, pico de gallo, cheese, shredded lettuce, cilantro, sriracha, sour cream, and salsa, and let the kids/adults pick their add ins.

Some sort of white fish, pan fried, purple cabbage, mango salsa, and some sriracha

standard R2R style fish tacos

- fresh red fish filets from Rouses seasoned w/ salt, pepper, Old Bay and chili powder then cooked in a reduction of butter/garlic/lemon juice (can also add a little cerveza or tequila) .. (can also add cornbread crumbs for some nice texture)

- coleslaw w/ cilantro, black pepper, marjoram, cumin, chili powder, garlic salt, olive oil, cider vinegar, lemon juice

- dill sauce w/ half sour cream, half Greek yogurt, lemon juice, garlic powder and dill weed

- chopped pineapple

- Tapatio hot sauce

Chipotle mayo. Make it by mixing chipotle powder (or adobo sauce from a can of chipotles) into mayo. Taste it as you mix in bit by bit so as not to get too spicy.

I don't do veggie oil. Clarified butter or coconut oil is what I use for this particular task.

cubed yellowfin tuna soaked in orange and lime juice for 3 days. serve as is on a tortilla with spicy coleslaw.

That's one opinion. I like flour personally. Especially since I can throw a rock and find a place that sales them fresh.

I'll do flour or corn, but I definitely like to crisp up the flour ones a bit in a pan or on the grill.

Catfish works well and it is inexpensive. Really, any flaky fish will do.

I read somewhere that one of the popular taco places in California had a "secret sauce" that was simply mayo thinned with a little water. I tried it and it was very good on fish tacos.

Corn tortillas suck for fish. Way too strong. And whoever said frying fish is an abortion? You are dumb.
