Paging stadium rat.
OP, Google Jambalaya calculator. It's an amazing tool. Even if only to save it for later use.

First decide what “feed them good” means. 1 cup serving of jambalaya? 2 cups? You have to know your serving size to answer your question.
1 cup of raw rice cooks to 3 cups of cooked rice. With the meat, it will be a little larger, but you don’t have to figure that in, you’ll end up with more than you’re calculating, which is always better.
So if you want 1 cup of jambalaya per person for 10 people, then that’s 10 cups of cooked rice. Divide that by 3 and you get 3.33 cups of raw rice.
If you want 2 cups of jambalaya per person for 10 people, that’s 20 cups of cooked rice, so divide that by 3 and you get 6.66 cups of raw rice.
Now, in case you wanted to take it further, 1 pound of raw rice is 2.3 cups of raw rice. So if you need 4 cups of raw rice, that’s 1.7 pounds. If you need 7 cups od raw rice, that’s 3 pounds of raw rice.

Always use -
1 lb or rice for 6 servings.
If its a lot of kids or small appetites, go with 1 lb for 7 servings.
