Horseradish Cream sauce - Request

I have tried to make a good cream sauce for prime rib several times. Always comes out watery or not creamy enough or something off.
I use the pregrated zatarains horseradish in the glass container.
Anyone have a recipe like the Rib Room in NOLA? Thats the best and hottest.

Big glob of extra hot horseradish
Big glob mayo
Smaller glob of sour cream
Squirt of creole mustard
Shot of vinegar OR Tabasco
Course salt
Shitload of cracked pepper
Dash of Cheyenne
Dash of Dill

put the bottled horseradish in a fine mesh strainer or a paper coffee filter and press out some of the liquid. barely add mayo (or even better, full fat greek yogurt) until you get the consistency you like.
in short, go over on the horseradish and under on the dairy. also, it will thin out a bit as it sits

Bubbies brand is a more even consistency than others I've tried. It mixed with sour cream perfectly.

Atomic or Beaver Brand prepared horseradish are the two hottest and best tasting I have found.
