Why be an arse? If someone likes eggs in gumbo or eggs in red gravy, big deal. I didn't grow up with eggs in gumbo, but I love hearing old traditions. People should eat it the way they want.

Well that isn't what the OP is talking about so.

My tip was to not put eggs in the gumbo. I've been to plenty of gumbo cookoffs, competitions and so forth and never seen an egg gumbo bring home the trophy. So if ya grandma ma put eggs in hers and you want to put it in yours...dats fine with me. It just gonna be fit for you and yours.

Met some folks tonight from LA (D'ville and Laffy) that put on the annual "Gumbo Gala" competition here in BHAM. If you think I plan to harvest all these tips to plan a win, you would be right.

Well, the superior Cajuns live in the west. The prairie Cajuns.

More ducks, better crawfish, better boudin, better gumbo. Yalls gumbo is clear soup with okra. Sorry bro.

Lol...how perfect is it that someone "from real Cajun country out east" turns a gumbo thread into a "we're better than you cause you're trashy" thread? Apparently the "little brother" syndrome not only applies to football. Who knew.

FWIW, I think the best boudin and cracklins are found in and around Lafayette area. But that's it.

And I don't put eggs in my gumbo. But if that's how you roll...knock yourself out. Just not for me. I don't mind it in a crawfish stew though.

You must not be Cajun if you didn't know there's a difference between Bayou Cajuns and Prairie Cajuns. clearly attributable to your Bayou Cajun lack of refinement and education.
