Homemade Philly Cheesesteak

Want to use the Blackstone to make some this weekend. For those who have, what cut of meat was used and where did you get it? Main question would be did the butcher slice it thin in house or did you do this on your own?

I'd get some cheap ribeyes. Throw them in the freezer for an hour or so and it'll make them easier to slice thin

I get the butcher at Dorginacs to thinly slice some ribeye.

Most grocery stores should be able to slice ribeyes for cheesesteaks.
Grocery store we use has them in packs in the meat section already sliced up ribbon thin. Works perfect.
And ribeyes would be the best cut to use by far. Need all that good fat to make it juicy good.
One note if you've never made them at home. Use a lot of onion. Takes a lot to flavor the meat really well.

Buy a whole tenderloin and use the Chain and other trimmings for cheesesteak.
Best one I've ever had is using that method. And you get 10 filets for a fancy dinner party.

I use ribeye and put in the freezer for 45 minutes or so, which makes it super easy to cut thin. It will cook fast sliced that thin, so be prepared.

I saw Alton Brown do that on Good Eats. So I tried it...and it was wonderful.
