I did no brewing this weekend. Sucks. I am planning on brewing my first 10 gallon batch this week sometime. Not exactly sure what kind of beer yet.

No brewing here either. I do have a couple days off after christmas with nothing to do. Maybe i'll run to the la homebrew and put something together.

yeah, they were packed when I stopped by on Friday.

They got their website up and running too last week. He has all of his grains, yeast, and spices on the site and most of the hops.

If there is something you need that isn't listed on the site you can always shoot keith an email, keith at lahomebrew.com, and he'll respond pretty quickly and let you know if they have it in stock.

They are just down the street from my work so I may head over there at lunch if they are open to walk-ins. Sounds cool.

They are only open evenings during the week (4-7) and 10-2 on Saturday, but they are pretty good about meeting people at the store early if someone needs to pick up an order.

I've got a 100% brett pale ale fermenting in the garage. I have a heating pad strapped to the fermentor and it is still struggling to stay at 70, F this cold weather. My wort had cooled to 58 by the time I pitched and got the heat going. It took over 24 hours to get temp up and for fermentation to get rocking. I'm open fermenting this so the garage smells awesome!

Yup. It's open. it is a bit hard to find. It is off of pecue, in a warehouse behind some buildings. I think in front of the warehouse is a flower store or something. But if you drive between the 2 office buildings in the front, the store is in the back. They really need to put a sign out front.

They have a bunch of ingredients there.

Question on Fermenting Saisons in the winter.

I want to brew a Saison next, similar to Goose Island Sofie, with my own twist.

How do you control temperatures when it is cold? My fermenting chest freezer is in the garage, and it appears that this week, it won't get above 60 degrees outside. That should leave the temps in my chest freezer no higher than 68. I plan on using Wyeast 3711 French Saison yeast. I know this strand can withstand a bit cooler temps, than 566, but i know i will need to have my fermenting fridge in the 75 degree range.

I've read of people using electric blankets, but i'm curious how this works. I have a temperature control on the freezer. How does the blanket work? Do i wrap the carboy in the blanket, and rely on the freezer to counteract the heat blanket to keep me at a median temp? This seems very counterproductive, and that i would end up freezing anything in the freezer, because the compressor would be constantly running to keep the temps from getting too high.

Or, do i simply set the blanket in the freezer, and let the blanket give off some ambient temps, while the freezer does the same. This seems a bit more logical, in my line of thinking, as neither would be required to work too hard. Also, any dangers of having a heating blanket in a fridge?

I have never tried to heat up the fermentation fridge before. i am about to install a heater in the form of a reptile infrared light bulb but my temp controller does heat and cold, so it is easy for me.

Personally I normally just move the beers inside the house.

I guess that is an option. However, if it's cold, i set my heater to only kick on at 65 degrees.

Maybe if i wrap the carboy in a regular blanket, the activity from the fermentation will provide enough ambient heat to keep itself warm.

I finally got around to brewing again over the weekend, going to try again tomorrow as well.

Brewed our test batch for the 2nd Annual Brasseurs a la Maison Iron Brewer festival in Feb. Our team drew porter and have to incorporate an Aphrodisiac ingredient into the finished beer. We are thinking about making a Tiramisu Porter with vanilla, cocao nibs, espresso and rum. We will see how it turns out. On Saturday we just brewed the base porter to make sure that was right before brewing the 20 necessary gallons for the final beer. The brew session went pretty well, had a little trouble with transferring the wort to the carboy but that was my fault. Ended right at 1061 and pitched most of a so4 yeast cake. It was blowing up within 3 hours.

I may just go pick up an aquarium thermometer and use my old swamp cooler.

This seems like a safer and more reliable option.

Those aquarium heaters are great for that purpose. Their temp range is perfect without the need for an additional controller.

I haven't brewed in a while, but hopefully next week I can get a brew in. Need to do something for the local competition coming up. I also just got home and noticed a box on the front porch from Monster Brewing hardware. Looks like I'm getting a monster mill from Santa.

Cannot imagine having to use that. I had to hand crank my mill for a while and it sucked balls.

No kidding... I hand cranked one batch and went directly to harbor freight to pick up a cheap chinese corded drill.

I use an electric blanket and set the carboy on top of it. I set the blanket on a very low temp..1 or 2. The freezer will kick on more to keep things cool but probably no more than it does in the summer time. I use a fridge fro fermentation though.
