As long as it's not windy, cold doesn't bother me. Standing near the burner feels good. I've had it be too hot out several times. Those July/August brew days get brutal unless you start before sunrise.

Cold is great, provided the wind ain't bad

Much better than summer brewing

Speeds up chilling the wort considerably

Yeah, it's been misting rain and windy so I decided not to brew. Bummed but I thinks it's supposed to be 70 later this week

Yeah, I'm going to bottle it here pretty soon. I want to free up that carboy so that I can put a 5 gallon pull out of my barrel in there on strawberries. That would give me 5 gallons of strawberry sour for bottling this summer.

I moved my baltic porter from the open fermentor to a closed one and put it inside to finish off. I'm going to let it go until about 1.005 and then dry hop for a couple of weeks before bottling.

I think that I'm going to do a 100% brett pale ale / ipa next. Need to figure out what kind of hopping I want to do on that. I'm kind of leaning towards going for danky, but we will see what happens.

Brewing a black ale tonight. It was one of my most liked beers so far (brewed it in August). A nice mix of dark flavor characteristics with a light body. Even my non-craft beer friends liked it because it's not heavy.

11lbs 2 row pale
.5lb black patent
.5lb Crystal 90L

An oz of bittering hops and maybe a 1/4 oz at 15 min (could use 1oz total with 3/4 at 60 and 1/4 at 15) but no late additions. Can use some sugar add if you want it to be even dryer and add some ABV.

Glad somebody bumped this. I really want to brew a nice interesting pilsner along the lines of a Noble Pils or a Pivo Pils.


Any general tips? Maybe not so much on the recipe because I can just google one of those most likely but process or water treatment or fermentation technique tips?

Sounds highly quaffable.

I just got a call a few minutes ago that my tank s ready for pick-up. Unfortunately I'm abstaining this week and have to wait until next week to drink any homebrew. I'm hoping to get one brew in next week before I leave town for Christmas.

I have been kicking around something along those lines for a black saison. I plan to use debittered black patent and go bigger on the hops. Probably won't brew it until this summer when it will be easier to keep the fermentation temp up.

I almost pulled the trigger on a 100% Brett Belgian Pale Ale today but got tied up on something and never made it by the brew shop. I checked on my baltic porter and the brett seems kind of sluggish in the mid-60s. Only down to 1.030, so moved it into the laundry room with the hopes of getting it up closer to 70.

In the middle of licensure testing. Wrap up on Saturday, then it's back to drinking as usual. Nicely enough, my exam location is right next to Pelican House, so drinks will follow quickly.

And R, box came in and all the soldiers were still in one piece. Rolling the dice going USPS. Sticking it to the man.

I've been having some trouble recently with low efficiency, however, last night went really well. I have 5.5 gallons of 1.054 black ale. 73% efficiency.

I really need to make something for fermenting now. I moved it into my bedroom last night that is the coldest room in the house and I woke up to 64% temp. My house just fluctuates too much.

How did yall make your fermentation rooms? Mini fridge and build a small room? trying to figure out the best method for a reasonable cost but good use.

I have been having this problem as well. I'm pretty sure I have it narrowed down to the crush from the LHBS. Hopefully Santa brings me a Monster Mill for Christmas.

I found a mini fridge on the side of the road. One of those 1.7 cf ones. I took the door off and built a cabinet around the front of it. Cost me $20 for the cabinet and then another $70 for the temp controller. In the heat of the summer it can only go about as low as 66 (beer temp), but other times low 50's is possible. Can't go cold enough to cold crash. Have to go into the keezer for that.

One problem with the mini fridge is the freezer section with the coolant running through it will ice and defrost constantly, resulting in a good bit of water coming off of it. When it's really going, it's not unheard of for me to have to dump the drip tray twice a day.

If space were no issue, I'd love to have a stand up freezer.

Lots of people use deep freezers or old refrigerators. I currently have a large dorm fridge with a temp controller but I used and will continue to use the spare bathroom's bath tub. Fill it with water to help regulate the temperature fluctuations and add ice to get the overall temp below room temp. Works surprisingly well.

I picked up a stand up freezer off craigslist for about $100 five years ago.

It works great, but takes up a ton of space. If you have the room I definitely recommend one.

I lucked into a fridge only Danby model. Contemplated converting it into a kegerator at the time(and I still might) but for now it will be my temp controlled area.

Hence why I want to brew a lager.

I've brewed one lager. Turned out awesome, but it took over a month before it was ready to drink and then I emptied the keg in 10 days.

If I had room to ferment ales and lagers at the same time I'd definitely brew them more often.

Did you decide on your fermentation schedule and water adjustments?
