I may move the 75 minute. This month's Zymurgy magazine has an article on late hop additions. My last IPA was very good, and i followed standard hopping practices. So i don't want to vary too much. And i like an IPA with bittering hops.

This is another revision of my recipe.

.33 Mosaic First Wort (90 minute)
.25 Chinook First Wort (90)
.33 Simcoe (75)
.25 Mosaic (60)
.25 Chinook (60)
.33 Mosaic (15)
.33 Cascade (15)
.25 Simcoe (10)
.5 Chinook (whirlpool)
1.09 Mosaic (whirlpool)
.67 Cascade (whirlpool)
.67 Simcoe (whirlpool)
DRY HOP 10-14 DAYS WITH:
1 oz Mosaic
1 oz Cascade
1 oz Simcoe

Total of 3 oz. Mosaic, 2 ounces Simcoe, 2 ounces Cascade, 1 oz. Chinook

Basically i increased my whirlpool hops so that i have no left over hops after boil (other than dry hopping).

Revised again. Reduced some of my bittering hops and added them to my late addition "flavor" hops. IBU's now at 76.1

Haven't followed your recipe evolution completely so I'll just ask.

Do you normally dry hop for that long? I find that 7 days is the MOST I can leave them before I start noticing off flavors. Most times I try to bottle or keg after about 5-6 days.

7-14 days. I haven't brewed an IPA in awhile, so I'm not 100% sure. But I believe my last one was 7-10

A week is my upper limit on dry hopping. I much prefer 3-5 days. After a week it gets too grassy for me. I think 3-4 days has been shown the be optimal. On my phone or I'd link to that source.

My only input is that I typically only use a single hop for my bitterness additions.

I pick a pretty neutral bittering hop like Columbus/Magnum/Chinook and just get all my IBUs from that single hop.

I save hops like Amarillo/Citra/Mosaic until later in the boil use them for flavor and aroma.

I think i'll change my drop hopping to 3-6 days. Again, i've brewed 3 batches between my last IPA, so I don't quite remember what i did. But it came out great.

Question: I know it may not be necessary for this brew, considering the amount of hops, but what do you think spruce tips would do if i added a couple ounces to the secondary?

My last went 2 oz for 7 days then 2 more for 7 more

Didn't notice any off flavors

Maybe B will share some of the ones I sent him and y'all can judge for yourself

Making a little (500 ml) starter to harvest yeast from bottles of a Dubbel I brewed a year ago. Going to pitch this into my bottling bucket before bottling my Northvletexan abt Quad.

ended up not brewing yesterday, just too lazy. I know the topic of racking has been covered here before, but I wanted to ask again...

I have this stout that I am making, and I am going to add 8 oz of nibs to it after fermentation. Normally, I'd rack it and be done with it, but I am thinking this time of just using a bucket and throwing them in there without racking. What would you do? Also, how do I sanitize nibs? I've read where folks used a little vodka and they think that it drew out the chocolate flavors better in their beer.

My Mosaic hops came in saturday from morebeer, for my Jolly Klaus Christmas IPA. Still waiting on the rest of my grain bill from Austin Homebrew. I ordered them Thursday. I expected to have them tomorrow, but i still haven't received a shipping notification.

Question: Regarding IPA's, what do 30 min. additions add to the hop presence? Taste, Aroma. I know moderate bittering is added, just wondering what i'm getting or not getting at 30 minutes vs. 15 minutes.

That's happened to me before too. They're great and all but most of the time I'm brewing on a pretty tight schedule. I can't say that I've bought from them since then. Nothing against them but I've been getting my stuff locally now. much less worry.
