Ordered the stuff for a breakfast stout. Hope to come in around 5.5%. Using oats and lactose, and going to secondary on cacao nibs, and add cold brewed coffee at bottling.

Brewed a pumpkin stout tonight, efficiency was a little low but everything else was on point.

How much pumpkin did you use? I was considering brewing tonight but decided to wait and do it tomorrow while getting ready for the game.

2 cans in the mash. Hit the temp right on but didn't convert all the way I guess.

Might add some pumpkin spice at kegging.

What size stock pot do y'all recommend for cooking wort? I'm looking at 20quart stainless steel. Thanks

I have a 10 gallon. Works well. I routinely start out with about 9.25 gallons if wort.

Finally got around to brewing my 100% brett hoppy wheat. I've gotten lazy about taking readings but put my new hydrometer to work today and got right at 80% efficiency. Now I can go back to not using it

I've seen numbers all over the place but more than a few people report getting 80% plus. I was worried about low efficiency when I started but it has never been an issue.

82% Maris Otter or 2-row
8% Crystal 60L
4% Caraamber
4% Red Wheat
3% Rye

Hops Target IBU 60-75
I'll develop a schedule when i get home and can use beersmith. But i'd like to use some Mosaic in each addition, and i want to do a 90 minute hop schedule.
Mosaic
Simcoe
Chinook
Cascade
Centennial

Yeast
WLP001

Mash in at 152. Simple Infusion mash.

Follow up to my recipe, I want the hop profile to be citrusy and piney, in the spirit of christmas. I know SN's celebration ale uses centennial, chinook, and cascade, which is why i'm using them. But i've read that simcoe is very piney, and i really like mosaic a lot. I may not use all those hops, but i'm trying to anticipate a good hop schedule.

I could be wrong, but I thought SN Celebration was all Centennial.

Not according to their website.

St. Arnold's Elissa is all cascade, maybe you're thinking of that one?

I assume that with that size pot, you're brewing with extract and partial boils, OR small batches (2-3 gallons).

If you have ANY desire to brew full boil batches for 5 gallons or more, you would do best getting something at least 10 gallons in capacity.

Do this
I was amazed at the difference going from partial to full boil seemed to make. I had some weird off flavor with my first few batches that stopped when I went to full boil.

Yeah after further review I am now looking for 40q stainless steel. Will go up in price but im finding out I will be way more satisfied. Hopefully my local shop has one and I can brew on sat.
