if I got a 6 gallon one, would the headspace cause a problem if I don't fill it all the way up?

Kind of. The bottoms are exactly the same size as my carboys but go straight up rather than out a little bit. So they are considerably taller and I suppose the entire footprint is smaller due to it being more of a can shape than a bottle shape.

I took a, rare for me, OG reading on my turbid mash and came in at 1.058 or 83% eff. After taking some pot measurements I determined that I actually got the final volume down below 6.5 gallons, so not too far off my target. I was expecting to get closer to 70% eff based on what others reported while trying to figure out the turbid mash process.

I've been back and forth with AustinHomebrew all day, and despite them admitting they fricked up, they still refuse to issue me a return label and say that I responsible for covering the cost of return shipping. So if you want good customer service, I'd go elsewhere.

I was trying to get the buckets with larger openings in the top. Looks like I'm drilling my own. Not a big deal, but I didn't have a proper bit for it.

After 5 days on the stir plate, my brett l. starter is finally showing some action. Smells delicious. I might need to step it up again.

I should have stepped my starter for the barrel up again. Not much action coming from the barrel on day 4 of "fermentation"

Mine took a week in my barrel to get going, then slowly churned for a few weeks before the saacch quit working. I did a straight roselaire pitch from the smack pack.

The idea behind making a starter is to give the yeast an easy environment to multiply and get going before throwing into 5 gallons. If you start with a small amount of yeast, throwing that yeast into a liter starter one time may not produce enough yeast to really tackle a 5 gallon batch quickly (case in point, my beer still isn't fermenting even though I used a week old 1000ml starer). So stepping the starter up, by either adding more wort directly to the starter or cooling the starter down and decanting the fermented wort and adding more is a step that many people utilize when starting from small amounts of yeast.

I think I had it and I think it was decent, but I'll be honest, things got a little hazy towards the end. My girlfriend recently discovered goses and loves them, so I'm pretty sure she came up to me with this one. My dark farmhouse at Zapps was like that. I didn't care for it, and neither did half the people who tried it, but it sure found an audience with some people and they kept coming back for it and ran me dry.

My buddy was pissed at me. On friday night both of our names were on the beer. But since he was bringing another beer on Saturday and it was my idea and implementation to add the peaches I just listed my name under the beer. Luckily everyone seemed to really like his Belgian Chicory Stout (which I originally cobrewed with him), he was able to deal with his name not being on the Peach beer.
