Have y'all been blowing up in Dallas? We have more work coming in than we know what to do with. Much better than this time last year.

Yea, everybody is pretty busy. I got busy around Thanksgiving last year and this is the first week I haven't been chasing deadlines.

Spontaneous fermentation is a GO! Airlock is bubbling I've been keeping a close eye on this and didn't see any signs of out of control bacteria growth or black mold. Now to let the wild yeast do their job for a few weeks and then split this up into a few fresh starters for pitching into different test batches.

At a loss for what I want to brew next.clooking for an all grain. Any ideas?

I've brewed the following styles so far.

Pompegranate farmhouse
Vanilla porter
Almond milk stout
Cascade dry hopped hoppy wheat(this was my first all grain)

I would do a simple all-grain pale ale. Cheap and tasty way to continue dialing in your system and technique.

Back read this thread and the recipe thread. Some good IPA and pale ale recipies here.

Going to see if I can get my first all grain batch going this weekend too, got all the stuff in yesterday. I hope the Calypso will be better than the El Dorado.

Just took a reading from my saison using Yeast Bay Wallonian Farmhouse yeast. Only down to 1.020 after a week. Not sure what's up with that. I mashed at 153 as this yeast was supposed to be super duper attenuative. I usually like my saisons to finish up around 1.006ish. Not bone dry, but not sweet. I'm going to have to sit back and wait on this one. It's been sitting at 73 or so, but it dropped down below 70 today due to the weather. Tastes good so far though.

Hmm. That's odd.

Hell I know how you feel with the temp thing. I feel like I've. barely had to use any refrigeration since December. I wake up in the mornings and my 68 setting is showing 65 because that part of my house gets cool and I don't use heat ever.

I'm sure all this will change soon but it's been interesting so far.

This winter has been a learning experience for my normally higher temp fermentation regimes. My fermentation cabinet hasn't been plugged in since October.

I took my electric blanket out of my ferm fridge yesterday. Looks like it will be 40 deg next Monday morning. This latest batch should be done fermenting by then though.

On your gravity readings.....you are using a hydrometer aren't you? I only ask because I used my refractometer....without correcting for presence of alc. one time and kept pitching fresh yeast.

I thought the Eldo hops were nice. Calypso will be new to me, look forward to trying it.

Oh, I do too, despite my initial concerns. I've never used Calypso, though, so not sure what to expect.
