Of course this week the temp would dip down to arse cold, the brewing gods just don't want my saison to ferment in the high 60's.

Same shite happened to me a couple weeks ago. Ended up fermenting at 63-64 and took for-ev-er. Like two and half weeks forever. Same yeast in a different batch fermented in a few days last week when it was warmer. The one that took a long time ended up being a fruit bomb rather than spicy. Not bad, just different. I hit it with an ounce of Neslon Sauvin dry hops to make it a super fruit bomb.

You let it open ferment? Add anything or just let it go its own course?

I put blankets over the fermenter and it appeared to be hovering right below 60. Just pissed that I upgraded my fermentation space to add a heater, but then I chose to use the V Vessel at room temp then the bottom falls out of the room temp.

It's Lager season still...


That does suck though.

I had trouble with the last two ales keeping them >60 in my beer room a few weeks ago.

Welcome to my world. Funny that I can control temps much better in the summer when it's hot than I can in the winter when it's cold.

I was thinking the same thing the other day. I have never had a problem of temps being too low. My ferm chamber is usually struggling to keep things below 70. I'm not equipped to heat.

I literally wrapped blankets upon blankets around my carboys.

That's ok though, I love the weather like it is today.

So far it's pretty good. A little sharper with the hops right now compared to St. Arnold's Bohemian Pils but that may be because it's only a month or so old. Might just need a little bit more lagering time to round it out.

I will be bringing it to Zapp's because we have so much going on between now and Zapp's and only really have time to brew one more time.

Just brewed one on Monday night. It is fermenting at 70 degrees right now though even though the ambient temp has to be below 66. Guess that is the little yeasties doing work.

Just checked on the fermenter, still sitting at 58ish even with two blankets on it.

It appears that fermentation was slowing down but hopefully it was able to get through most of the sugar (it was fermenting pretty well yesterday). I will have to figure something out this evening.

Guys, invest in a fermwrap. Picked one up from LA Homebrew to do my saison, which was fermenting during the snow days. Kept it plugged in, temp controller set to kick on at 74 and shut off at 76. Kept it in my chest freezer. Worked extremely well. I was surprised at how well it worked.

I have the methods to heat the fermentation chest up, just with the new V Vessels I have, I do not have the ability to keep them in my fermentation chest freezer. So I left them out on my sunporch, and since I didn't pay attention to the forecast is much colder than anticipated.

Not this time, pitched some slurry from my 100% Brett pale ale, then covered it for about 6 hours until there were signs of fermentation abd then opened it up. So it was open for about 4 days.

I'm going to try a spontaneous fermentation this fall using the half barrel that I got. I'll prime it this summer by doing a couple cobtroled fermentations in it and see what happens.

Had to run home at lunchtime, so I cranked the heat up in my beer room and got the temp to 68. It should stay pretty close to that for a while. And I wrapped the 3 buckets I've got going right now in blankets.

Bring on the warm weather!

I've moved my beer inside the actual house, wife isn't terribly pleased but the temp is now back into the high 60s
