I pulled a sample of my 100% brett amarillo / citra pale ale today and it is down to 1.008. This smells just as great as the last batch and is just bursting with citrus. It isn't as tart as the last batch and I am pretty sure that has to do with only letting it open ferment for 4 days vs 10 days for the last batch. I'm going to let is rest for a couple of more weeks so that it can get down to around 1.006 before the dry hop.

I've been lazy lately. I need to keg my hibiscus ginger saison to free up a fermenter and ferment the Vienna/Amarillo SMaSH I brewed a couple weeks back.

My rolling kegerator setup performed great at Mardi Gras. Made many people on the route happy. The cat piss saison went quick.

FInally decided to tap my dark farmhouse I brewed back the first week of October. The darkness comes from 6 oz of chocolate rye. Fermented with 3711 and Brett c. A little oak added. It gets a solid meh-to-nay. I might drink some for the next week or two, bottle a few up, and take a couple to brew club for criticism, but I don't see myself going the full keg. Too many other beers I want to brew and not enough space to hang on to a beer that doesn't make me happy.

ETA: A little more tasting notes. The aroma is all dark fruit. Think chocolate covered cherries. Really good. First hit on the tongue is the acid malt twang, followed by the pils. Brett fruit hits, but is taken over by a not so good bitterness. After taste is where it gets bad. It's stale ,almost vegetal. Just craps out at the end. Very disappointing, but lessons learned, which is the important thing.

You have to be really careful when using dark grains with Brett b/c it can really amplify the undesirable characteristics of that bitterness. That being said, be sure to set a bottle or two aside for me and toss it in our next trade.

I did not. Should have, but didn't. Probably the quickest turn around on beer I've had in a couple years. Was grain to glass in three weeks. For me that is quick.

It will be in bottles by then for sure. I'll also have some 1st year lambic pulled from my barrel and bottled by then.

Trying some things out with this dark farmhouse that I'm not happy with. Figure why the hell not. Took it and added a nice splash of budget-friendly shiraz to a glass. A little better. I think I might pull the keg and add some blackberries to it. Have nothing else to lose at this point.

I'll have to take a raincheck on a trade. Only have one thing on tap right now and it's that dark farmhouse, which isn't worth trading for anything.

Understandable. I will bring some down for you regardless and then you can repay the favor on the 29th? I'll counter-pressure fill a few growlers and just leave them with you.
