Home style Drago’s charbroiled oysters

I bought this cast iron egg poacher a few weeks ago. I bought it with the intent of making charbroiled oysters.
I take Drago’s recipe (pretty easy recipe), fire up the grill and broiler

HOw did you get the flame so high?
I tried this recently with a muffin pan, didn’t turn out great but still decent

My guess would be from the liquid he basted them with that likely contained butter and tilting the pan caused the liquid to hit the coals and flare up.

I use a charcoal grill but I take a grill brush and dip it in the butter and toss at it the flame.

My second batch came out prettier. Granted, I put two oysters per hole this time.
I now know why they are so expensive, it takes a ton of butter

When Dragos first started doing them they had the butter mixture in a bucket and used a big serving spoon to dollop the oysters with the mixture and the spoon was so big it overflowed onto the charcoal to create the flame and smoke. Now it’s all melted and used in squirt bottles.

Has anyone tried the premade Drago’s Butter mix they sell at the grocery stores? I saw it at Calandros.

Aebleskiver pans can be used for many things. Never thought about charbroiled oysters.

Good luck. I have tried it at home and can't get it to come out as good as Drago's, because I can't get my grill to get as hot as theirs does.

Had these for a couple of years. Use on my BGE. Modified the drago's recipe and they work very well.
