I like Creole Country Sausage’s hogs head. It has larger chunks of meat mixed in if you like that style. You can find it at some groceries (I know Dorignacs carries it) or go to the shop where they make it in mid city.

I recently got some from Tag's Meat Market on Judge Perez near Chalmette High and it was pretty good too. They make 3 kinds, regular, jalapeno/cheese and gumbo hog's head cheese.
I only got the regular and the jalapeno/cheese and both were nice with good size chunks of meat and good seasoning.

Just to cover some other place...Rouse's Hogs head cheese is ok if you put some hot sauce on it..Which brings up another gripe...Why does Rouse's waste their time making sausage? It sucks all the flavors suck.

Their hot sausage fell off a lot the past few years and I decided to make my own. Now I make my own green onion, hot, Italian and breakfast sausage-----and like it much better.
Rouses hot sausage got to a point it wasn't even flavored, wasn't hot and didn't have much going for it, so I quit buying it.

Funny you post this...... I went to Laplace today to get some andouille for a pheasant, quail and andouille gumbo I'm making on the guys weekend in two weeks and picked up some HOT HH cheese at Bailey's. In fact I'm having some on crackers right now.
Perfect with an ice cold beer!!!!!
