I'm into tomatoes lately. Anytime my smoker is working, I've got those lovelies in there. I halve them and seed them, sprinkle with my homemade version of Old Bay, smoke, and then when cooled down enough to handle the skin simply slips away. Use for salsa, sauces, bisque, etc.

I've seen Ruston peaches at stands. I haven't tried yet but smoked peaches are on my to do list.

Anything obscure that you would implore me to try?

I grew jalapeños for the first time this year. Threw a head of garlic and a few peppers in the smoker for about 2 hours and mashed into a paste. Made some great smoked garlic jalapeño mayo

I like your tomato idea too. Smoked tomato basil soup sounds right up my alley.

I'd like to do a ton of onions, maybe just for an hour or so, and make some French onion soup

My basil is crazy right now and loves to mingle with the smoked tomatoes.

Add a touch of cream or coconut milk ftw. Makes a great sauce for fish too.

My dad is into making smoked cheeses recently. I took some home with me but have yet to try any of them.

Smoked chilton county peaches during summer are great! You should give a try. If I have the smoker going I will also smoke some watermelon, then add some fresh mozzarella and mint.

We have been smoking tomatoes for a few years now. The salsa turns out great. But my favorite thing to do with them when I pull them off is take the skin off, cut in half and top with a little bit of pesto sauce and some cheese. Melt the cheese in the oven and serve them as a side dish. They are excellent.

Today we have beef ribs smoking. I say we because it's my brother doing it today. I take no credit for however good or bad they turn out. I'll try to get some pics when I go there in a few minutes

Freeze those smoked tomatoes for soups and sauces. Delicious.

Try smoking mushrooms. Then use some in a pasta sauce.

I tried salmon once and I wasn't impressed with my results. I'm not sure if it was the recipe, but it turned out to be sort of a candied mess unlike any smoked salmon I've ever had.
