Habanero Peppers...Anyone Have a Good Salsa Recipe For Them?

I have a sackful to use.

Use them in a mango/pineapple salsa.
Ingredients
1 cup chopped peeled mango
1 cup pineapple tidbits
1/2 cup diced sweet red pepper
1 plum tomato, seeded and chopped
3 tablespoons minced fresh cilantro
2 green onions, sliced
2 tablespoons lime juice
1 tablespoon lemon juice
1 jalapeno pepper, finely chopped
I use jalapenos but of course habanero or scotch bonnet is a more fitting pepper.

I posted a few days ago about attempting to make a batch of habernero peach salsa.
It was ridiculously hot. I added all the peaches l had to tone it down. I tossed it in the woods.

I only use habaneros in my salsa pretty much, unless I'm making it for others then I'll use jalapeno or serrano.
I use 1 habanero per 2 lbs ish of tomatoes. If you want to cut the heat, remove the white/waxy membrane from the inside of the pepper. That's where the heat comes from, not the seeds as commonly mistaken.
You can also add a mango or any kind of stone fruit preservative to cut the heat or for sweetness/flavor.

If I use habaneros or hot cherry peppers I use them sparingly. I use a lot of jalapeño for the base heat of the salsa and add the other two to bring the heat to the desired level. If you just use peppers that are higher on the scale all you get is heat. I prefer flavor and then the amount of heat I want.

Here is mine, lasts for 2 weeks in refridgerator and gets better like pery pery sauce.
Sweat 1/2 white onion in oil until soft
1 garlic clove minced
1 peeled and chopped carrot
4-5 habaneros minced and seeded
1 14 oz can tomatoes or use fresh, I used about a dozen yellow cherry tomatoes plus a fresh tomatoe last time.
1 cup water
Pinch of sugar optional
Simmer on stove top until carrot is soft.
Cool and purée , add juice of a lime and 1 Tbs white VINAGAR and salt and pepper to taste, color will be orange.
Enjoy I find it addicting

Just did a similar salsa, but I subbed peach for the pineapple and added a little honey and parsley. No lemon juice, at least for now. Good stuff.
