what are your favorite recipes or ways/ mixing of foods to make it your go to food?

I like mine over a slab of blackened redfish with a scoop of rice.

Gumbo and rice no maters. Tater salad on the side.

No bones in my chicken gumbo and no shells in my seafood gumbo. I can deal with a crab claw or two.

Sometimes I turn leftover jambalaya to make what I call cajun fried rice.

I've cut the carbs so this year it will be cajun fried rice cauliflower concoction.

Okay.

I like a good gumbo omelette. Scramble six eggs and scoop some seafood gumbo into it as a filling. Top with American cheese and salsa. It’s how I make it my go-to food.

We also like pouring a scoop of gumbo over cheese fries when we have friends over to watch football

That sounds pretty good - especially with a Popeyes style buttermilk biscuit to dunk in the gumbeaux

Sounds like etouffe. Put that over some fried slabs and rice.

Gumbo goes over rice with a dollop of potato salad on top

I love to drop eggs in boiling gumbo once all the meat is gone.
The French Press in Lafayette has the best concoction... a stack of French bread, boudin patty, Egg over easy, all drizzled with gumbo

Occasionally my dad will add chunks of redfish, sheepshead, or drum to his seafood gumbo. Always good.
