John Folse puts celery in his gumbo and as seen in another thread, he's the guru of all food gurus. I think he claims to be Cajun, also.

Paul Prudhomme is definitely Cajun.
When I was growing up in Lafayette, a Cajun woman from New Iberia showed me how to make gumbo for the first time. She's long deceased, but shared her family recipe. She used celery in her gumbo.
Interesting, though, that you say that Cajun gumbo doesn't contain celery. This is the first I've heard that. I need to read up on it. Any sites about the history of Cajun gumbo?

i don't know that there is a right or wrong answer to this question but both sides of my family are cajun (Evangeline Parish) and no one uses celery.
i've had this conversation with my parents and grandparents. none of them have ever used celery in their cooking, gumbo or otherwise.
lots of chefs and books argue that celery is a traditional part of cajun cooking but it just isn't something that either side of my family has every used. just like any other ethnic cuisine, cajun cooking is not completely homogenous in terms of ingredients/preparation.

i use celery. my family sometimes does, sometimes doesnt....depends on the cook. plenty of them are cajuns.
tomatoes? hell no.
celery? totally acceptable.

I'm from Lafayette and have eaten gumbo from folks all around Cajun country.... at least 75% don't use celery.

I am from Lafayette and I use celery in mine. Alex Patout's recipes use celery in most of the gumbos BTW.

Celery in Gumbo yeas it is part of the trinty, but he said he puts celery in Jambalaya? NOt me just onions

Already did. But my ingredients are:
roux
onions
green onions
garlic
red bell pepper
chicken and andouille sausage
cayenne pepper
I use chicken stock from previous chicken dishes...there is always stock in my freezer.
I'm light on salt because you can always add it at table.
No okra...file.
Largest party I cooked for is 50.

I don't put celery in Jambalaya. But I've seen it done and had it in SW La. I use onions, green onions, garlic and red bell peppers in my Jambalaya. I have never had gumbo with celery in it and I'm old as dirt.

Her last name escapes me right now, but her first name was Eula Mae, not that this helps much.
I'm fascinated by the "no celery" Cajun gumbo. This is really interesting to know. I wouldn't leave it out because I like it, but it's a very interesting fact.

I put celery in my gumbo but my mother doesn't. That's the great thing about gumbo, you'll never eat two that taste the same.

Ive yet to have gumbo that tastes any BETTER.
I cooked 7 gallons yesterday and 7 gallons last week at OM.
About 100 or so people would tend to agree with me.

now this is a distinct difference....cajun gumbo is not "tomatoey" - usually completely without....no one in my family puts tomato in either gumbo or jambalaya....thats why i cant eat it in new orleans....... new orleans is the site for tomatoes in gumbo and jambalaya

I am from Abbeville and have always and will always put celery in my chicken and sausage gumbo. And fwiw, it is standard protocol to put celery in gumbo in Acadiana. Also, no tomatoes, no okra.

Celery has never been in any of my gumbos. I have about 6 stalks left over from making my cornbread dressing. I may try some. I usually make one or two gumbos a year. 4-5 gallons at a time. I have the Benoit's sausage and andoullie. I have always used cut fryers. I am tempted to break out and use hens. Better?
