Okra in gumbo sucks. I have heard that if you dehydrate the okra before you put it in then it won't get slimy. Then it would be OK.

You wrong. Of course it's gumbo without okra. In Louisiana, there are three common forms of gumbo (seafood, sausage, z'herbes). Okra is generally used in the searfood version but not the others. It can be but doesn't have to be.
Just because your "mee-maw" used okra in hers, doesn't mean its the only way to make gumbo.
