Ground veal

Was given a couple pounds of ground veal today. Never bought it before and not exactly sure what to do with it. Was thinking burgers but curious if y’all had any other ideas?

Meatballs is the correct answer. Ground veal is in my standard recipe:

1 lb ground veal
1 lb ground pork
1 lb ground sirloin

1/2 to 3/4 medium yellow onion chopped fine
4-6 garlic pods chopped fine (we like garlic - adjust according to taste as 6 is strong)
1 raw egg
3/4 cup Italian bread crumbs
1/2 cup parmesan (the good stuff not the pre packaged)
S&P to taste but careful with the salt as parm is salty

Blend all by hand in a large mixing bowl and use a 1/3 cup to make your meatballs. Roll them gently and don't make to dense. Bake for 15 minutes at 350 turn and bake another 15 minutes. Take out and put directly into marinara for another 10-15 minutes. Enjoy!

Chicken fried veal? Just the first thing i thought of really. Form thin patties, freeze then double batter, fry em up and make a quick white gravy. I feel sure it would go well with marinara as well, so you ought to make some meatballs while you are at it.

Meatballs is the best option.

I'm also a big fan of using ground veal in a simple meat sauce. Mushrooms, ground veal, marinara and some parmesan cheese.

I don't see why you couldn't do either of those dishes with thin patties. I think I remember someone posting pics of a chicken parm they did using ground chicken instead of cutlets, maybe even the same poster

When I make the dishes I mentioned, I usually go with a cutlet too, but I am a master at using what I have. Here are a couple of photos from my Chicken Parmesan Florentine dish, which I would normally use a chicken cutlet when I make it. You can find the photo spread for that dish here.

Take your ground veal, season it and make patties to the size you prefer. I would make them 1/2 inch thick. Cook the patties in a little olive oil to a light crust, then go from there.

I understand many here (6th&Barone for example) are very strict traditionists and uneasy trying anything different. If you are uncomfortable, please forgive my suggestions.

Sorry Meridian, I don't think that qualifies as veal parmesan. Honestly, I am married into a traditional Italian family, veal parm is my favortie dish (overall since childhood) and my go to in most Italian establishments. If I ordered Veal Parm in an Italian restaurant and was served Veal patties with cheese and sauce, I would be pissed. I am sure its delicious but its not veal parmesan. Those are veal meatballs.

Because its not Veal/Chicken Parmesan. Search recipes for these and you will not find ground meat.

Those are glorified veal/chicken meatballs.

To the OP, Make flattened meatballs and then do the rest of the dish exactly as you would do parmesan. Although I never said it was a restaurant dish (I went back and fact checked my posts), I believe you will like it as much as I do.


If you had veil cutlets, make the dish look like this.

There are actually several recipes using ground chicken or ground veal if you do a Google search
