Rosemary, garlic, salt. Crush up in mortar and pestle. Black pepper good as well. Make into a paste with a little bit of olive oil. Sometimes I'll add a little bit of white wine. Rub all over chops and let it all hang out while you get a fire ripping hot.

Grill on both sides til desired doneness. I like to serve them with some roasted potatoes or a nice salad of cucumbers, tomatoes, capers, lemon juice and a bit of yogurt.

BGE Lamb Pops

These are awesome. Make them all the time for my family. Cardamom makes this dish.

There are a lot of recipes on the internet or you can just rub them with olive oil, garlic, thyme, pepper, etc. However you do it be sure to have mint jelly on the side.

And careful exposing the bones to the high, direct heat as they will quickly burn. I try to get a nice crust started in the first 2-4 minutes and then move to top rack for the next 6-10 minutes until I hit rare.

Tried yours. Very good. Used it on those small lamb chops.

Dog loves those small bones too.
