Grill vs Black Cast Iron for Steaks

I can cook with the best of them on a grill. But I have issues with a black cast iron skillet. Any hints? And which do you prefer?

What issues are you having? I only cook steaks on cast iron.

I’ve started using the reverse sear method and it works great for me. Oven to temp then sear in a hot cast iron skillet

I want to get a sous vide machine too.

I prefer cast iron to grill. I'm to the point I use my grills propane side burner with cast iron pot for most meats. Elaborate on your issues.

I like the reverse sear method, but I normally just use my propane burner outside

i do both. Sear on screaming hot cast iron then transfer to grill.

Same here. I just don't know the timing in the pan.
I've got my grill timing down to an art.My grill has cast iron grates and makes great grill lines.

Bring steak to temp with reverse sear/sous vide, screaming hot pan, 45 seconds per side with butter/grapeseed oil and garlic cloves, down the hatch.

It’s not exactly hard.

Neither is cooking it in a cast iron skillet either for that matter.

Timing isn’t as important as feel or even using a probe.

Or in my case, just flip and flip until the crust is perfect and the meat is still cold on the inside.

If I marinate the steaks I use the grill..I don't marinate too much anymore but I still like the grill.

I’m the opposite, I don’t have my grill down yet, but I can cook a great steak in cast iron. I just got a sous vide recently and now it’s easy mode though

I always use feel, but like I said, I got a timing method too.

1" Rib-eye

Place steak on smoking hot grill and close lid.
Open beer and trow 4 retrievals for the dog, rotate steak 90 degrees, 2 more retrievals, beer is half empty.

flip steaks drink rest of beer and 3 more retrievals

feel steaks- Usually, they are perfect and ready to take off. It's crazy, but it works.

I think my issue has been the cast iron was not super hot. I may try on the burner attached to the grill and then use the grill as an oven with indirect heat to finish off the 'well done' steak that my wife has to have. I know, I know.

I’m a skillet guy.

Ii do a 1 inch Ribeye without cooking in the oven.

Comes out pretty good. Thicket stuff you either need to reverse sear or finish in an oven.

filet = cast iron skillet

all other steaks = grill

same.

you eat with your eyes too but i like the flavor a little flare-up here and there adds to a grilled steak over just a pan-seared steak (unless its a filet).
