Great Slow Cooker Recipes?

So I bought a slow cooker a few months back and it's pretty much changed my life. I go to school full time and work part time so it's pretty hard for me to find the time or energy to prepare a full meal when I get home.

I've kind of hit a wall in what I can actually make in it so I'd appreciate some new ideas. Anything creole/cajun would be great as I never get to eat that anymore. Thanks.

Pulled pork

Brown all sides of a Boston butt
Put in slow cooker on low for 8 hours
I pour a root beer over mine

This one makes a ton, so you ca cut it I had if necessary.

Large bag/box of spinach
2 cans corn (frozen corn works, too
2 cans rotel tomatoes
2 cans red enchilada sauce
2-3 packages taco seasoning
3-4 pounds chicken
2 packages Lipton Mexican rice

Spinach first, then corn, then rotel
Lay chicken in a single layer on top of veggies
Sprinkle taco seasoning over chicken and pour enchilada sauce over the top.
Cover and Cook for 4-5 hours on low
Shred chicken and pour rice into pot and stir.
Cook until rice is tender, about 20-30 minutes.

I've tried it with white rice, but I never add it early enough and the rice is crunchy. It needs at least an hour, possibly 1:30 if you're home.

Serve with chips, cheese, guac & sour cream. Easy dish with veggies and there are plenty of leftovers

My favorite:

1 jar sliced pepperoncini, juice and all
1 beef roast

Best sandwiches EVER
It's enjoyable bc it's not your average roast taste. And it's delicious.

Just add a slice of cheese and some mayo.

Here is an idea. Chicken breasts are generally not as tasty as legs or thighs. They tend to be a bit tough. But if you put them in a slow cooker for 4 hours they fall off the bone. Great gravy too.

I did some today. After removing the chicken I added some corn starch to thicken the gravy for rice.

This is a slow cooker recipe that I love.


Slow Cooker Chicken Tacos: 

1 jar lime salsa 
1 tsp coriander 
1 tsp cumin 
1 tsp garlic salt 
1 tsp black pepper 
1/2 - 1 tsp cayenne pepper 
2 packs of taco seasoning 
4 large boneless skinless chicken breasts 

Place chicken in bottom of slow cooker - if you are leaving for the day, cook on low. 
Mix all ingredients in a bowl and pour on top of chicken - do not stir 
when chicken is tender, pull apart and let it simmer in slow cooker for an hour. 

Serve on tortillas or hard taco shells with cheese, lettuce, and other toppings of choice.

My wife will put a brisket - cut to fit - in it during the morning. Season it and add about a cup of water. Turn on high most of the day. When she gets home she has pulled brisket tacos which kids destroy and I'll eat them as well.

No browning or anything. Works for her.

Do red beans or white beans - they do well in a crockpot.

I'm sure you could build an easy etouffee or shrimp stew in it although I've never done it.

It's actually really good. It's basically taco soup with some added spinach for nutrition. You can serve it as is, or you could probably stuff some soft tacos and turn it into enchiladas, but that kind of defeats the purpose of quick, easy meals. You can also add beans if you want, but I think my family would revolt- they aren't a fan of black beans
