That is why there is a separate brew house and fermenter. Keep all the brett and other nasties away from the main production brewery.

I was reading a thing awhile back that some of the nappa valley people that Russian River gets there barrels from won't step foot in the brewery.

Next week we are off to Allagash Brewing in Portland, ME. Brewmaster Jason Perkins has graciously set aside some time to walk us through their world-class operation to share best practices and provide helpful insight as we kick off our program. We couldn’t be more excited to learn from one the best in the world.

I think RR requires you to change clothes and shower if you are going from the sour program to the regular program.

Could only use it 1 month out of the year.

I've heard a few podcasts with the guys from JK where they say they are pretty much on call in January and February for when they get the few good nights of the year.

I think Jester King uses their coolship two months in a similar climate. They talked about it on the recent Sour Hour podcast.

Beat me to it.

I know Garrett previously said it can be kinda unpredictable in the south. They were waiting a day cool enough to begin their 2013-2014 season, only to find the first day cold enough was in fact too cold. It was 12F and all of their hard piping froze, preventing them from brewing for several days.

Open fermentation conducive to spontaneous wild fermenation.

If they are getting schooled up by Allagash, I'm super interested. I really like Allagash's barrel program. I'm sitting on a few of their bottles right now waiting on the right day. Righteous stuff.

Yes. I was assuming Austin Area was cooler. I have no idea, I've never been there.
Coolships are great and all but between Brett and bacteria and barrel aging they would have plenty to keep them busy.

been able to expand. For a small brewery in freaking Shreveport to have 2 expansions and grow to all major markets (except SW LA) in less than 2 years it amazing.

Deep pockets and good beer can take you far.
