Gratuitous Brag post (Jambalaya)

More and more frequently I get elected to cook for groups. I don’t mind. I like it most of the time.
Tailgates, holidays, hunting clubs meetings, family events,
Usually bbq/smoked stuff because I have an old big pit and crawfish when in season.
That is getting old.
I needed to mix it up a little.
Watched a couple guys cook a good Jam at an LSU game this year.
Got a 10 gal pot for my anniversary from my wife (no pics but I married up)
Downloaded the Jambalaya calculator for the ratios. Read the old pochejp thread and made a couple slight mods such as bacon to start because well......it’s bacon.
Turned out MONEY. Flavor is great, rice was tender, spice was subtle(kids don’t like it hot) but present. Prep work was a pain but process really is a piece of cake.
Made enough for my family, my parents, the weekend work crew, and half a tray in leftovers.
Nothing to it.

Another good one.
I used bacon, pork butt and chicken thighs with Canecu smoked sausage
I also used more onions than the ratio says.

Damn, I need to make a jambalaya soon. The last one did not go well for me and my pride was hurt.
