There's a good attachment for the KitchenAid mixer if you have one of those.

What's your budget? Cabela's has some good grinders also Weston supply.....they make the Cabela's grinders, or at least they used to.
I had a 1/2 hp. from Cabela's it's all you need. I got a deal on a new 1 hp. and couldn't pass it up...but it's a beast.

I have the grinder attachment as well as the sausage stuffer for the Kitchen Aid stand mixer. They both work pretty well for a multi purpose tool. I would not try to make 100 pounds of sausage at a time with them, but they are fine for the home cook. However, the sausage stuffer does not work well for boudin since the tube is auger fed. It grinds up the rice. You really want a piston type stuffer for boudin.

I have the LEM #8 Big Bite grinder. I average 2 deer a year and make sausage with almost all of it. I broke a gear but they sent me another within a couple days.

Do you grind everything at once at the end of the season?

Have never grinded or attempted any of this before. Completely new to me. I don't hunt much, but usually have a deer or two in freezer with occasional pig mixed in. Im sure that I will be doing all the processing at one time though.

Cabela's has a Deluxe grinder for $175.00. Forward and reverse with lifetime warranty. They will also be putting a lot of stuff on sale soon. If it we're me I would buy a .5 hp. Carnivore (about $350.00) it will last forever and if you decide you don't like it you can sell it very easy.
Also Smoking Meat Forums is a great web site for this lot of of good folks will to share information.

Sausage making thread That’s how I do it. I like to be one and done. I debone all the meat and freeze. It’s a 2 day process for me. I do all the grinding/seasoning/stuffing on one day. I keep it in the refrigerator overnight. The second day I smoke it and vacuum seal it. I posted in a thread awhile back that details exactly what I do. I will find it and update.

One of these days I will get into sausage making. What are some other seasonings that y’all have tried. I see the ones that y’all use, but we’re there others that were bad? Or different but good?

AC Legg makes some good seasonings . The Zesty Italian is really good if you like that kinda thing.
I also do a breakfast patty sausage using Rebel county sausage seasoning. I add a little to it but it’s good like it is.

I get mine at Cutrers in Amite or Kings packing Co in Mccomb. A hank is about $18. That will do close to 100 lbs of sausage.

Which grinder do you have Pdub?

NVM. #8

Is it worth getting the next one up, or does the #8 do the job without catching too much sinew?

It’s been fine so far. I trim the meat of excess silverskin before grinding.i also run it through partially frozen. Not frozen but just about. It feeds better and doesn’t turn gummy.

I don’t wanna spend any more money on one that’s gonna get bogged down. I’ve had it!

I also don’t wanna drop $5-600. Think something in the 1HP range is gonna go on sale at Bass Pro or Cabelas? 4 bills is my max. LEM makes a .75HP that’s right around that price.

They may go on sale now that hunting season is close to being done. I’d also check northern tool. They have some pretty good products as well. I have a LEM and it’s served me well. Their customer service is good also.
