Need Recipe for Sausage

I'd like to make my own pork sausage like you buy in the old country stores or meat markets in southwest La. Just need some of the ratios for seasoning per pound of meat, and anything else that you're supposed to add. Also may add some venison to the pork when available. Thanks to all who may have some knowledge, can't really find anything online.

Rebel butcherI make mine using Rebel seasoning. It's all in the seasoning and you don't need to add anything other than cure. They even sell it with the cure if you prefer going that route. I use .38 oz of seasoning per pound of meat.
We typically do a 50/50 or 60/40 deer pork mix. I cube the meat and measure the seasoning using a small scale. Add the spices/cure to some water and pour over your meat. Mix that by hand and run it through grinder. Then it's ready for stuffing. Once it's stuffed I put in the fridge overnight. It gets smoked over low heat 180-200 using the oak/pecan/hickory until the color is right. That's usually 2-4 hours depending on what you like. Pull it off when the color is good and submerge it in ice water to stop cooking process. Dry it off and vacuum seal.

Where you located. Rouses will sell you mix if there's one near you.

We use Deep South Green Onion Sausage seasoning as a base. One pack will season 25lbs of meat. To that we also add 2 bunches of green onions, if we're making green onion sausage to grill. Sometimes we also make jalapeno, for that we add 2 13oz cans of jalapenos.

We do this as well. Cut our meat into long strips about 3/4" square if possible, then season it, then grind it. Your grinder gets dirty but the seasoning gets distributed more evenly.

I like grinding once and done. Then I can stuff it. I try to do everything in stages so I don't have all the equipment out at one time. Yes the grinder does get dirty but I don't mind because my wife washes it. It's a 2 day process for sure but worth it.
