I'm pretty sure Omaha steaks are bottom quality compared to pretty much any other place.

Just sent my dad a sampler of wild boar, elk, and bison steaks from Sayersbrook. I wanted to be a bit different.

Ralph and Kacoo's in the French Quarter had an entree that was essentially an ostrich hamburger steak, ages ago.
Was not impressed. The flavor was underwhelming.
I'm sure you could integrate ostrich as a protein in a dish where flavors and textures are highlighted from other elements.
