Frying whole catfish

How do I do it?

Not a big cook here - I grill, and cook scrambled eggs. I fry fish and chicken wings as well.


And a separate question : Can you heat oil hot enough to fry on a outdoor grill running on natural gas?

Score each side of the fish, to the spine, about every 1.5 inches.

Season as you wish and bread as you wish. I like seasoned cornmeal. I do not use a heavy batter.

Fry at 350, uncrowded, until it floats.

I would think it would depend on how it's jetted. Whether you get a high, blue flame kicking up some good BTU's or not.

I'm sure no matter what the jet, the oil will eventually get hot enough, but may not keep a good cooking temperature once the fish is in the pan.

You got this. Just do as suggested above and make sure you have a cooking thermometer...heat is everything!

350 is important, if it gets hotter than that you end up with dark brown raw fish.

If it’s catfish, slather in Louisiana Hot Sauce before u dust w seasoned cornmeal.

As noted, it would depend on the grill. It would difficult to get and maintain the proper temp on most gas grills.

Maybe if you have a good sideburner and the wind is not blowing.

The sideburner on one of my old grills would barely boil water, but the new one kicks arse (with natural gas).

Using a sideburner may also limit your pot size, so check the fit beforehand.

Like a gas BBQ pit? I would not. If that oil starts to splatter you might have a problem.

It's the way to cook catfish in Missouri. We call them fiddlers.

Cornmeal and seasonings and pan fry in a cast iron skillet with a little oil.

No joke. Heat your oil to 350F. Deep fry a few fish at a time, not crowding the pot. It’sdone When golden and floating.

350 is real here, you can fry fillets all day long at 375 if they aren't too thick but don't do it with whole catfish. Sometimes I will cook whole medium sac-a-lait this way and I stick to that temp in a large non-crowded black iron pot.

Middendorfs does a really good whole catfish, much better than the thin stuff. I score my fish on an angle all the way to the bone. It won't get greasy if you don't crowd the pot and drop the temperature.
