specifically trout...What ingredients do you dip your fillets into before you batter with fish fry?

I toss them in a little La hot sauce then batter and fry

Strip them thin, toss in yellow mustard (or creole), then zatarains fish fry.
350f for 5 mins or until they float

Mustard for trout?
We use flour and seasoning (Tony's, Slap Ya Mamma, ect.) and pan fry them in butter normally.

If they haven't been frozen yet, skip the mustard. Red pepper, black pepper and salt (LA Products mixed seasoning is good for seafood) and then batter with Zatarains or LA Products crispy.
If they've been frozen, then I'll do the mustard to get any freezer taste out of them.

Soak fish in Crab boil brine for couple hours. Then run thru egg and milk bath. Then batter with Zatarians lemon fish fry.

I use a beer/yellow mustard bath, drain and coat with a fish fry. Fried some catfish last night.
