Frozen crawfish tails...rinse?

Been cooking my whole life for crowds to couples...just a camp cook though.

I have a phobia about using the whole bag of tails with the pancreas sauce as I've had one bad experience where the dish tasted like raw seafood. Therefore I rinse the crawfish first in a colander.

Seems sacrilege even though they are la certified crawfish.

Anyone else have this issue...talking frozen here?

I wouldn't do that. But maybe it's just me.


Made 6 lbs of frozen La. tails into etouffee tonight. Was good.

On frozen, I wash the fat off. I've had more experiences where the dish came out fishy tasting than not if I didn't. I don't know why freezing them would have that effect. But it's been my experience.

Put 1.5lbs of frozen tails (2packs) into my crawfish dip tonight and it's all gone. Juice and all from the pack was in the mix. I make this often never had a problem

No argument but is it really fat I always understood that to be the pancreas.

Not trying to split hairs but what really is the orange juice...help me crawfish experts

I've read that the head of the crawfish contains an organ called the "hepatapancreas" that people call this the "fat" of the crawfish.

I'm not sure if that's what's in the bag with the tails or not.

I had a dish come out muddy tasting one time, and I've rinsed ever since, Other folks say they have never had problems and that it is sacreligious to rinse.

I don't think I've ever rinsed crawfish tails.
