For those of you unsure to do with peppers you’re growing..

I made this Hot Pepper Relish today that came up much better than expected so I figured I’d share.
Had some Havasu peppers and some jalapeños ready to pick. Cleaned them up.
Got them into the processor with equal parts onion and pulsed. Moved to mesh strainer where they were mixed with salt and left to drain for 3 hours.
Rinsed with cold water and squeezed in a towel to get all water out. Put the vinegar and sugar going on the stove - I did a little extra sugar because I like sweet relish.
Simmer for 10m
And there you have it. Tastes exactly like regular sweet relish at first, but then you get a very nice spicy aftertaste. I can’t wait to put it on some grilled dogs.

It’s going to taste like straight vinegar and pepper if you don’t use sugar, my friend.
