Rouses ad in today's paper shows they are selling whole, untrimmed briskets for $1.99 a lb.

So, at that price, go get one, or two and get them on the smokers for the weekend.

How much does freezing them negatively impact them? For how long can they be frozen?

I think beef freezes the best out of all meats. They already come cryovacced so it takes out the extra step of vaccum sealing at home.

I think they'd be fine frozen for 6 months. If I have one in my freezer I generally cook it within a month or two so haven't really pushed the envelope regarding duration.

They freeze well

and they most likely were frozen when they got there.

Freeze with confidence!

Same goes for there twin pack of butts for .79/lb they had the other day.

Does it say if they are prime choice or otherwise?

Speaking of freezing - how long is it safe to keep refrigerated in cryovac bag after sell by date? Have a 15# Costco prime with a sell by date of 8/13. Would like to smoke on the 21st. Freeze or not?

I would play it on the safe side and freeze it. You're talking about 8 extra days just sitting there.

Unless you plan on brining it like I did last week to make it into corned beef and pastrami. It is in the brine since last Thursday and will be in it until the 20th when I will cook it.

If it is still in the cryovac packaging and is still air tight, then I'd definitely not freeze it, but that's just me.

I bought a prime brisket @$2.49 at Sam's on Monday (it's in the freezer) and picked up two at Rouse's yesterday. I'm gonna grind these two with some chuck and deer meet.
