Flank Steak Tacos

Grilled flank steak tacos from a few weeks ago.

-Marinated flank steak with olive oil, minced garlic, juice of one orange & a few splashes Worcestershire sauce for one hour.

- removed from marinade, patted dry and showered liberally with salt & pepper

-cooked over lump charcoal with a few pecan chunks thrown in the mix for a little smoke. After achieving the crust I let heat offset until mid-rare+.

-served with homemade guac, diced purple onions, cilantro and lime.

Looks good. I do the same once or twice a month, but I prefer skirt steak for mine. I use flank when I can't find skirt, or if the skirt is too pricey.

My marinade is reduced sodium soy sauce, fresh lime juice, half a bottle of Negro Modelo, garlic powder, honey, olive oil, chopped jalapaneos, and chopped cilantro.

That's an ideal taco right there. I would just trade flour for corn.

my wife wont eat medium rare (terrible)

I make them every week in the cast iron.

I don't marinate (usually don't have the time when i come home from work)

do a dry rub of kosher salt, cumin, Chili powder and garlic powder.

usually get a pretty good seer but not as good as your thought.
