Thanks Smeg! I will try a few variations but traditional for me works the best. I am now going to focus on what I have not made, Panna Cotta and Creme Brûlée.

I do a creme brûlée SV just as posted above with a little almond extract. I then make a banana foster topping that goes on top of the caramelized sugar. It is the easiest and most impressive dessert to make, not to mention it is amazing. In this photo, I dont remember if I even put the brûlée on it.

I love both, but Flan takes the lead for me. The unique flavor of it is one of my favorites of all time, and it's great enough to beat out Creme Brulee's fantastic melody of textures
