First boil in a stainless pot

Is the water supposed to be black/brown and not redish? I’ve only owned an aluminum pot before and first cook today has the water black in color rather than the red/orange tint I’m used to seeing. I’ve washed the pot with soap before but should have seasoned it somehow?

I usually boil plain water in it and let all the shite flake off before I let people eat out of it.

Why would anyone want a stainless pot? Aluminum is much better at transferring heat.

Your pot probably did not go though a passivation process. The Chinese manufacturer skipped the step of dipping the pot into a vat of nitric acid. You can passivize the pot with critic acid at home but may not be worth the effort.

You are right. But some people get stainless pots for dual purpose. Boiling crawfish and home brewing beer. You really need stainless for brewing beer. Aluminum oxide can transfer over to the beer from aluminum pots and give an off taste.
ETA: I believe aluminum pots can be used for home brewing beer however you need to make sure that the pH is in the 8 range so aluminum oxide does not leach off. Adjust the pH to 5ish once you transfer to the fermenter.

No bugs, just water and seasoning. It got to boil and when I peeked at it, that’s when I noticed the water color. I let it run an additional 15 minutes, dumped that, and made a second run of just water. Boiled that for an additional 15. Third run had the orange/red water color. Then I started cooking.
Sorry for sounding like such a dummy but I had never heard of needing to prep a stainless pot like that before.

They probably coat the inside of the pot with something. I think you woukd have been fine just washing it with soapy water and rolling with it. You did fine doing what you did and shouldnbe GTG from.here on out.
