Fine dining restaurant advice

Planning an elaborate dinner with the Misses and thinking about where to go and I've narrowed it down to a few choices. I may be missing some but it is intentional as I guess I'm somewhat of a foodie given that I've worked in restaurants with talented chefs and I want creative appetizer/side/etc options for everything but steaks and desserts. Here's the ones I've narrowed it down to, in order of where I'm leaning:
1. Delmonico in n.o
2. Fleming's(br)
3. Stabs (b.r. area-central)
4. Mr. Johns(n.o)
5. Dickie Brennan's(n.o)
6. Mansurs(b.r)
7. Chophouse(n.o)
Any votes? Feel like I'll get a good MR ribeye at all the above so more asking about unique options for the other courses

Go to R'evolution if you want elaborate, if you have to have a steak go to Doris Metropolitan.

Yea don't understand the steakhouse for a foodie. Out of the list you have, Delmonico but there are much better options.

Been to both, due to work schedules we don't get to do this kind of thing often do we like to try a new place when we can, looking more for advice on the list given; the best bang for my buck (prepared for $200-$400, depending on wine)

Sort of a strange list for the goal for an elaborate foodie dinner during which you want to have steak, but if that's what you and the misses want, then by all means, do it!
Out of your list, I'd go with Delmonico. I like eating in the front room overlooking St Charles. I've never had steak there, though. I always get a fish or seafood dish and have enjoyed all of my meals there.
Look on the bar menu at the snacks and small plates, as well. We ordered some snacks at the table prior to having our apps. The pancetta wrapped dates were very good and we had amb stuffed fried olives which aren't on the menu, but were excellent.
I remember having an app or entree that had a smoked tomato sauce of some sort. Delicious whatever it was. I think I put the review for that meal in the dining guide, so it's probably gone. I'll look around. It's been a few years since I was there.

Basically I/we like elaborate meals that end in a great steak, I.E for Delmonico's the meal plan was start with charmoix, manchego curado and balarina artisian cheese's with salchichòn, capocollo, and lingua Charcuterie, followed by crabmeat remick, Bienville oysters, calamari Apps, then a split house salad (herb vinaigrette), then on one plate a half portion of each entree: the swordfish and the salmon, then a split Caesar salad, then the 9 oz filet for her, bone in ribeye for me w sides. A bite or two of each so I can eat most of ribeye and leftovers for a week like I said I don't eat out much but when I do I'm eating great for days because I bring a lot home. Idc about dessert, likely cheesecake to go.
So that's what I mean by foodie. I want to try as much as possible as long as it ends in a great steak.

Been several times, including our first date.. Probably will wait til proposal to go back, depending on how much longer I hold off

On your updated criteria based on quite a few courses you may consider Square Root. You get between 12-15 courses and it's quite good. The seating is a little unconventional.

Manseurs is meh for the price.
Fleming's is better for the money, but is still nothing unique or special (unless you're at the bar getting their happy hour burger).
This is a mediocre list, imo.
